Oxygen is undoubtedly the number-one enemy of freshly roasted coffee. Mere contact with air can lead to oxidation of the beans, resulting in the gradual loss of their characteristic aromas and flavours. As with wine, coffee is a living substance in constant evolution, and once exposed to oxygen it begins to deteriorate.

In addition to oxygen, humidity is a serious threat to coffee's freshness. The simple operation surprised me. Once the beans have been poured into the container, all you have to do is put the lid on and turn it to evacuate the air from the container. This movement must be made until a small green button appears, indicating that the air has been evacuated. This absence of air allows the beans to stay fresh longer, preserving their quality and flavor. The vacuum created does not complicate opening. All you have to do is press the button on the top of the container to break the negative pressure and allow easy opening.

Fellow Atmos containers are available in matte black, matte white and clear. The glass container stands out for its ability to tell at a glance how much coffee is left, and whether a trip to our favorite coffeshop is in order. However, matte black and white models have the added advantage of blocking out light, which can also degrade the coffee beans. It's true that to achieve the same result with glass containers, it's always possible to clamp them away from the light!

In my opinion, although the Fellow Atmos Vacuum Canister comes with a hefty price tag, it makes a real difference in terms of freshness. My coffee beans retain their significant aroma for much longer, and the taste is much less affected by oxidation than I'm used to. Available in a range of sizes to suit individual needs, it's also a great addition to any kitchen, and makes a great gift.

Considerations

However, it should be noted that the container is not suitable for storing ground coffee. In fact, this could damage the valve and prevent the container from sealing properly. In addition, it requires gentle hand-washing.
